Newcomers can ease into vegetarianism

Mar 2019 — After Vivian Goldschmidt received her master’s degree in nutritional sciences and biochemistry, she traveled from Africa to South America. Fluent in six languages, she accessed material in those countries not usually available to visitors. When she returned to the States, she developed an approach to health and wellness that identifies and deals with the root causes of diseases instead of their symptoms. She founded Save Institute to prevent osteoporosis and other chronic conditions via drug-free approaches. She relies on evidence-based data from published peer-reviewed studies, clinical trials, meta-analysis, etc.

Vivian offers seven ways for newcomers to wean themselves off meat:

1 In pasta replace some of the meat with chopped mushrooms, which soak up the flavor of the sauce.

2 In sandwiches replace the creaminess of chopped chicken or tuna with plain yogurt, mustard or homemade tahini; their chunky texture with chopped nuts, fruits or vegetables.

3 In casseroles replace the meat with different textures of vegetables; millet or quinoa; grilled vegetables.

4 In tacos, burgers or other sandwiches, replace the meat with marinated portobello mushrooms.

5 Serve eggs for dinner with a green salad and fresh fruit OR stuff an omelet with vegetables to balance the pH level.

6 Grill fruits and vegetables to give the dish a meaty texture and flavor.

7 Use the spongy texture of eggplant to soak up flavors in different ways – as dip steamed, cut into chunks and blended; in casseroles diced and baked; just sliced and grilled.
