Stuffing works for the holidays and other times
September 16, 2022 – Fall and winter bring holidays and stuffing. As vegetarians and vegans, we have the honor of creating different ways of using it than our carnivore friends and acquaintances even imagined.

Newbies can substitute pumpkin or pineapple cornbread stuffing for oyster dressing. As they become braver, they can drain tofu, crumble and marinate it, then line a colander with cheesecloth, place the marinated tofu inside, make a well and fill with the cornbread stuffing before baking their plant-based turkey in the oven.

If they are less brave, they can slice the drained tofu in half, score the top half before placing cloves, top the bottom half with the cornbread stuffing, cover with the cloved top and bake their plant-based ham. That takes care of Thanksgiving, Christmas and New Year’s Day. What about Explorers Day, Halloween, Veterans Day, Election Day and the many bowl game days? They need stuffing too.

Oldtimers already know how to stuff squash, peppers, mushrooms, edible leaves and the many nightshade vegetables. They basically remove the seeds, make a well and fill with other cut up vegetables, fruit, cooked grain, ground nuts and seeds or pureed beans. They eat their seasoned creations, containers and all, either raw or cooked, with or without sauce or dip. When the shells like those of avocados aren’t edible, they grind up the pulp and mix it with the stuffing first. If they don’t hate a little oil, they save the seeds for low-temperature baking in the oven, and then season them well – with or without salt.

So people making stuffing and placing it in an edible container are being deliciously creative while feeding their microbiomes.
